Stir Fried Hokkien Prawn Noodle Recipe (Vegetarian)

Coarse Vermicelli in Fish Broth

Ingredients

  • Coarse Vermicelli (laksa bee hoon): 800g

  • Yellow Noodles: 400g

  • Bean Sprout: 200g

  • Chinese Mustard / Chye Sim (cut): 250g

  • Mock Prawn: 120g

  • Mock Squid: 120g

  • Ginger (chopped): 30g

  • Oil: 2 table spoon

  • Water: 600ml

Seasonings

  • Mushroom Powder: 2 tea spoon

  • Vegetarian Stock: 2 tea spoon

  • Vegetarian Oyster Sauce: 2 tea spoon

  • Cooking Oil: 1 table spoon

  • Pepper: Dash

Cooking Method

  1. Heat wok, fry yellow noodles and vermicelli separately and set aside.

  2. Heat wok and oil. Stir fry chopped ginger and add mock prawn and squid and fry till fragrant.

  3. Add in water with all seasonings.

  4. Put in vermicelli and fry for a while, add in yellow noodle and continue to fry. Splash a small amount of water to it and fry till dry.

  5. Add bean sprout with Chinese Mustard / Chye Sim and stir fry evenly.

  6. Plate and serve.
