Snow Fungus, Pear and Mutton Broth

Ingredients

  • Brown Pear: 1 pc (approx. 375g)

  • Snow Fungus: 20g (soak to soften)

  • Mock Mutton: 125g

  • Carrot: 1 pc (approx. 170g)

  • Sweet and Bitter Almond: 30g

  • Dried Mandarin Orange Peel: 1 pc

  • Honey Dates: 1 pc

  • Red Dates: 10 pcs

  • Water: 3 litres

  • Sliced Ginger: 6 pcs

Seasonings

  • Mushroom Powder: 2 tea spoon

  • Vegetarian Stock: 1 table spoon

  • Pepper: Dash


Cooking Method

  1. Wash brown pear, snow fungus and carrot, skin carrot before cutting into pieces together with the pear.

  2. Boil 3 litres of water in a pot.

  3. Add sliced ginger, red dates, honey dates, dried mandarin orange peel, sweet and bitter almond and put to boil for 10 minutes.

  4. Add in pear, snow fungus, carrot and mock mutton and boil further for 20 minutes on high heat. Lower down heat and cook for the next further 20 minutes.

  5. Add seasonings to taste and turn off heat, let it simmer till ready to serve.
